500g of leftover beef (roasted or boiled) cut into small cubes
1/2 cup of chopped escarole
Salt and black pepper to taste

1 Heat the olive oil and sauté the chopped onion until it's translucent
Add the beef cubes and let them brown well on all sides
2 Add the chopped escarole, stir with a wooden spoon, and season with salt and black pepper
Cover the pan and let it cook for 1 minute
Serve immediately.
