In a 26cm diameter refractory dish, mix the olive oil, onion, and garlic and microwave on high for 3 minutes or until the onion is softened, stirring halfway through
Add the spinach, mix well, and microwave on high for 1 minute
With a spoon, make four indentations in the spinach and crack an egg into each one
Use a toothpick to make small holes in the yolks
Sprinkle the spinach and eggs with salt and Parmesan cheese
Microwave on high for 3 minutes or until the whites are set and yolks are creamy
Remove from microwave, place crackers around the edges of the dish, and serve immediately
