1 2/3 cup of red bell pepper, finely chopped
1 2/3 cup of green bell pepper, finely chopped
4 cups of cucumber, peeled, seeded, and finely chopped
1/4 cup of salt
1/2 cup of water
3 oranges
2 cups of white wine vinegar
2 cups of grated Parmesan cheese, well packed in the cup
1 tablespoon of mustard in grain
1 2/3 cup of red bell pepper, finely chopped
1 2/3 cup of green bell pepper, finely chopped
4 cups of cucumber, peeled, seeded, and finely chopped

1/2 cup of water

Mix together the bell peppers, cucumber, salt, and 1/2 cup of water
Let it rest for a day or two
On the following day, drain it
Reserve the orange juice for another use
Grate the orange peel and pulp using the coarsest grater
Combine all the ingredients and bring to a boil
Allow it to simmer slowly for about 10 minutes
Pour into hot sterilized jars and seal tightly
Yield: 1 1/2 liters.
