Beat the eggs and whites with the all-purpose flour until the cream increases in volume and becomes clear and fluffy
Add the ricotta cheese mixed with wheat flour and lemon rind, and continue beating
Finally, add the butter and just mix
Pour the dough into a 25cm round mold greased with butter and dusted with wheat flour
Bake in a preheated oven at 200°C for about 1 hour or until it is firm and golden brown
Let it cool and demould
Dust with candy maker's sugar
