Saute the onion with 1/4 cup of butter
Add the rice and paprika and saute until combined
Add the chicken and white wine and cook until the liquid evaporates
Add 1 cup of chicken broth and cook without stopping, stirring constantly
Add more broth, a ladle at a time, without stopping to stir
Season with salt and black pepper and remove from heat
Add the remaining butter and half of the cheese
Stir well and serve with the remaining grated cheese
