4 tablespoons of olive oil
1 chopped onion
2 minced garlic cloves
1 pound chicken breast cut into cubes
1 large potato cut into cubes
1 carrot cut into cubes
1 envelope of chicken broth mix
2 cups uncooked white rice
4 cups boiling water
1 tablespoon salt
1/2 cup chopped fresh cilantro
1/2 cup grated Parmesan cheese

In a pressure cooker, heat the olive oil and sauté the onion, garlic, and chicken cubes
Add the potato, carrot, and chicken broth mix
Add the rice and stir everything delicately
Add the water, salt, and cover the cooker
Once pressurized, wait for three minutes, remove from heat, and open when all steam has escaped
Transfer to a serving dish, sprinkle with cilantro and Parmesan cheese, and serve.
