Leave the gray duck to marinate in water overnight
The next day, drain and cover it with more water
Place it in a pot, along with one cinnamon stick and salt, and cook until tender but still firm. Reserve
On the day of preparation, slice the pork shoulder into 1 cm thick strips
Place it in a pressure cooker and cover it with water
Add one cinnamon stick, salt, and cook until the meat is tender but not mushy
When ready, reserve it
Chop the onion
In a pan, sauté it until golden brown
Then add the rice, letting it fry well
Next, add the pork shoulder and gray duck, along with their respective cooking waters
Add salt if needed
Cover and cook initially at high heat, then reduce heat and stir occasionally
When the rice is cooked, the dish is ready to serve
Serve accompanied by fresh yogurt, natural yogurt, or salad.
