Clean the shrimp and set the meat and shells aside separately
In a large pot, bring the shells and water to a boil at high heat
Drain and reserve the liquid
In a large pot, sauté the olive oil, onion, and tomato over medium heat until the onion is translucent
Add the rice, stir-fry slightly, and add the reserved liquid
Bring to a boil and reduce heat
Add the shrimp, mussels, squid, and cumin
Cook, stirring occasionally, until the rice is tender and the mussel shells open (if using fresh mussels)
