Preheat the oven to medium temperature and grease a baking dish with olive oil
Season the fish with salt and pepper

Mix together the olives, garlic, thyme, and parsley
Add
the remaining olive oil and cornstarch
Season to taste with pepper

Spread a thin layer of the olive crust over each fillet
Place them in the prepared baking dish and drizzle with white wine
Bake for 12 minutes.
