1/2 cup all-purpose flour (60g)
1/2 cup unsweetened chocolate chips (45g)
1 tablespoon active dry yeast
5 eggs, separated
1 cup milk (180ml)

For the filling
2 cups milk (480ml)
1/2 cup all-purpose flour (90g)
1 tablespoon instant coffee powder
1/4 cup cornstarch (30g)
6 Seduço chocolate chips (130g), finely chopped

Preheat the oven to 400°F (200°C)
Grease a 27x40cm baking dish with butter, line with parchment paper and grease the paper
Make the dough: in a small bowl, sift together flour, chocolate, and yeast
Set aside
In a stand mixer, beat egg whites until stiff
Add milk and continue beating until stiff peaks form
Add egg yolks and beat until light and fluffy (about 5 minutes)
Add the reserved flour-chocolate mixture
Mix delicately with a wooden spoon until homogeneous
Transfer the dough to the prepared baking dish
Bake in the preheated oven until it starts to release from the sides (about 30 minutes)
Let cool for 5 minutes
Remove from baking dish and dust with milk powder. Reserve
Make the filling: in a medium saucepan, combine all ingredients except chocolate chips and cook over medium heat, stirring constantly, until thick (about 10 minutes)
Transfer to a large bowl and let cool
Add chocolate chips and mix well
Spread the filling over the dough and roll up using a clean cloth, then remove the cloth and transfer to a serving dish
