5 large egg whites

Beat the egg whites until they froth
Add the cream of tartar and beat very well
Gradually add 1/2 cup of powdered sugar, beating constantly
Beat the yolks until they thicken and become pale yellow
Add the remaining 1/2 cup of powdered sugar, orange peel, red wine vinegar
Sift the flour again
Combine the yolk mixture with the egg whites
Gradually add the flour, mixing well
Place in a rectangular mold, approximately 2.5 x 37 x 25 cm, lined with aluminum foil
Bake in a moderate oven for about 20 minutes
When done, turn onto a powdered sugar-lined cloth
Carefully remove the aluminum foil from the cake
Wrap it in a towel, starting from the narrowest side
Let it rest until cooled
Unwrap carefully and top with coffee cream
Roll up again and cover with chocolate coverage
Pass a fork along the length of the rocambole to give it a trunk shape
Sprinkle chopped nuts if desired
Coffee Cream: Beat heavy cream into a chantilly, add confectioner's sugar and coffee powder
Mix well
Chocolate Coverage: Melt the chocolate with butter or margarine
Add confectioner's sugar, milk, and vanilla extract
Mix very well
Let it rest, stirring occasionally, until thickened.
