Mashed Potatoes
1 kg of cooked potatoes, skin on
1 onion, finely chopped
2-3 tablespoons of mayonnaise
Lime juice from 1 lime
Salt and black pepper to taste
Filling
500g of small prawns
1 tablespoon of butter
1 onion, finely chopped
1 tablespoon of all-purpose flour
1 cup of milk
1/2 cup of grated cheese
2 tablespoons of parsley
Salt and black pepper to taste

Make the filling: In a pan, melt the butter, sauté the onion for 2 minutes, then add the prawns and cook for another 2 minutes
Dissolve the flour in the milk, cook until thickened and season with salt and black pepper
Add the grated cheese and parsley, mix well and let cool
Mashed Potatoes: Peel and mash the potatoes while still warm
Season with salt, onion, mayonnaise, lime juice, and black pepper
Mix until smooth
Roll out the mashed potatoes like a rectangle on top of plastic wrap
Spread the filling, roll up like a croquette and cover with mayonnaise
Refrigerate for 2 hours.
