Sift the ricotta cheese
Combine the salt, eggs, and flour, beating well
Refrigerate for 2 hours
Remove from refrigerator
Take a small amount of dough, and with your hands dusted with flour, shape into rolls approximately 5 cm in diameter
Fry over medium heat in melted butter for 10 minutes
Reduce heat and let cook an additional 10 to 15 minutes
Flip the rolls once during frying
Serve with sour cream
Yield about 10 to 12 cheese rollys, depending on size.
