Cut the beef into thin slices possible
Remove the skin
In a bowl, mix the remaining ingredients, moistening with a little bit of bacon fat and warm water enough to make the filling firm but not dry
Place 1 tablespoon or more of this filling over each slice of beef, roll it up, and tie with skewers
Heat a skillet greased, brown the rolls all around
Add a little warm water
Season with salt and pepper
Cover the skillet and cook, turning the rolls occasionally
Remove from the skillet and thicken the liquid that remains with cornstarch or wheat flour
If desired, serve over cooked potatoes
