Cut the beef into pieces and season with garlic, one tablespoon of onion, salt, and black pepper
Aquatic oil and sear the beef
Remove the stem (white part) from the kale and cut it into strips
Reserve the rest of the leaf intact
Join the stem to the beef, add one tablespoon of flour dissolved in a cup of water and cook until thickened. Reserve
Pour part of the remaining flour into milk mixed with leftover water
Heat the butter and sauté the remaining onion, then add milk, season with salt, and stir until thickened
Scald the kale leaves and spread cold beef on each one
Roll up each leaf and serve with the sauce.
