1 pound of mignon beef (1 kg)
1 sprig of thyme
1 tablespoon of fresh rosemary
1/2 cup of soy sauce (shoyu)
2 tablespoons of light cream cheese
1 pot of low-fat natural yogurt
1/2 cup of finely chopped scallions
1/2 cup of green olives, pitted and finely chopped
2 tablespoons of lemon juice

The night before, season the beef with rosemary and thyme
Preheat the oven to a high temperature
Brush the beef with soy sauce and place it in a baking dish with a grid
Roast for 40 minutes or until the beef is golden brown
Remove from the oven and let cool completely
Cover with plastic wrap and refrigerate overnight
Sauce: Mix all ingredients well
Cover with plastic wrap and refrigerate
When serving, transfer the sauce to a bowl and place it in the center of a platter
Slice the beef into strips and arrange around the sauce
The beef should be served chilled.
