Marinade
1 kg of filet mignon (from the center part)
1 cup of olive oil
White peppercorns and salt to taste
2 large onions, chopped
150 g of dried tomato
1/4 cup of red wine
1/2 teaspoon of thyme
1/2 teaspoon of rosemary
1/2 teaspoon of oregano

Tie the meat with twine to keep fibers together
In a bowl, mix 1/4 cup of olive oil, peppercorns, and salt; coat the meat with this mixture
Preheat the oven to high temperature
In a pan, heat the remaining olive oil and place the meat
Fry until browned on all sides
Remove from the pan and transfer to a greased baking dish
Bake for 15 minutes
Turn off the oven and let the meat stay warm inside it
In the same pan, sauté the onion and cook until soft, about 5 minutes or until needed
Add more olive oil if necessary
Combine the dried tomato and stir; add wine, herbs, and simmer for another 15 minutes
Slice the meat and serve with the marinade.
