Flour:
4 cups all-purpose flour
1 tablespoon active dry yeast
1/3 cup warm water
1 teaspoon salt
1/2 cup warm milk
2 small eggs
1/2 cup unsalted butter, softened or margarine
Grated rind of 1 lemon
For garnishing:
1 egg white
1 tablespoon milk
1 hard-boiled egg

Mix the flour with the yeast in a bowl
Add the warm water, salt, milk, eggs, butter or margarine in small pieces, and grated lemon rind
Mix well
Knead all the ingredients together very well, cover with a cloth, and let it rest for 1 hour in a protected place
Knead again and shape into a roll with a diameter of 4 cm and a length of 1.40 meters
Line an oven dish with parchment paper and grease it well
Hold the end of the roll in the center of the dish and roll it into a spiral shape
In the middle, place a hard-boiled egg to form a depression
Let it rest again for 30 minutes
Preheat the oven to moderate temperature (170°C) and bake for about 20 minutes
Remove from the oven and brush with an egg white mixed with milk
Put back in the oven and bake for another 10-15 minutes
Remove from the oven and replace the egg with a colored one, or use chocolate chips.
