2 eggs

60 g semi-sweet chocolate (in tablet form)
2 tablespoons butter or margarine
1 cup cooked and mashed potatoes
2/3 cup milk
3 1/2 cups all-purpose flour
6 teaspoons active dry yeast
1/4 teaspoon ground cinnamon
Vegetable oil for frying

Beat the eggs until they are fluffy
Add the flour and beat well
Melt the chocolate with the butter or margarine and mix with the eggs
Add the potatoes, milk, and flour mixed with yeast and cinnamon
If necessary, use enough flour to obtain a dough that can be manipulated
Leave the dough in the refrigerator for 1 hour
Roll out the dough on a floured surface and cut into circles of 7 cm diameter
In the center of each circle, cut a smaller circle of 1.5 cm diameter to form the truffles
Fry in hot oil until golden brown on both sides, flipping only once
Drain on paper towels
Sprinkle with common or confectioner's sugar, if desired
