1 1/4 cups freshly squeezed orange juice
1 envelope active dry yeast
1 tablespoon sugar
2 tablespoons grated orange zest
4 1/2 cups all-purpose flour, sifted
1 beaten egg
3/4 cup granulated sugar
1/2 teaspoon salt
3 tablespoons unsalted butter or margarine, melted
Vegetable oil for frying

Combine the orange juice, yeast, and sugar in a bowl
Let it rest for 5 minutes
Stir until the yeast is dissolved
Add the grated orange zest and 1 1/2 cups of flour
Beat well
Cover and let it rise in a protected area for 1 hour
Beat the egg with the sugar until light and fluffy
Add the salt and melted butter or margarine
Mix well
Add this mixture to the yeast mixture
Beat until smooth
Add enough flour to obtain a soft dough
Place the dough on a floured surface and work it by hand until smooth and elastic
Shape into a ball, place in an oiled bowl, and let it rise in a protected area for 1 1/2 hours
Open the dough onto a floured surface, to a thickness of 0.5 cm
Cut into rounds with a 7.5 cm diameter and then cut out the center with a thimble or a small cookie cutter to form the orange fritters
Let it rise again for 1 hour until the fritters double in volume
Fry in hot oil until golden, turning once
Drain on paper towels and dust with powdered sugar
Serve warm, at snack time
