Prepare the sponge dough, adding sugar to the other ingredients
Continue with the recipe until step 3

On a floured surface, roll out the dough to a thickness of 1.5 cm
Cut out the rings using the larger cookie cutter and in the center of each ring, cut out a circle using the smaller cookie cutter
Place the doughnuts on baking sheets dusted with flour
Heat the oil in medium heat
Fry four doughnuts at a time until they are golden brown on both sides
Remove with a slotted spoon and let them drain on paper towels
Let them cool down

Put a little water in a pan and bring to a boil
Remove from heat and place the chocolate chips in a heatproof bowl (be careful not to let the steam from the water come into contact with the chocolate)
Let it rest for five minutes

Stir until the chocolate has melted and removed from the warm bath
Continue stirring until the chocolate thickens and cools slightly
Dip the fried doughnuts in the melted chocolate on one side, letting any excess drip off
Then roll them in grated chocolate
Let it set over a wire rack and serve.
