To make the good walnut cake:
3 cups of walnuts, finely chopped
1 cup of sponge cake flour
1/4 teaspoon of salt
9 eggs
1 1/2 cups of heavy cream
3/4 cup of orange juice
1 1/2 teaspoons of grated orange zest
2 cups of whipped cream
A jar of raspberry or guava jam; don't forget the walnuts, the cake name, and decorations.

Mix together the walnuts, sponge cake flour, and salt
Beat the egg whites until they become thick and have a light yellow color
Gradually add 1 cup of heavy cream, beating continuously; then add two more tablespoons to achieve the right consistency
Add the orange juice and grated orange zest
Beat the egg yolks in a snowy texture, adding the remaining heavy cream gradually and beating well
Mix together some of the walnut mixture and sponge cake flour with the beaten egg whites; also mix in some whipped cream
Divide the mixture into two greased forms, approximately 25 centimeters in diameter, lining the bottom with parchment paper
Bake in a moderate oven for 30 minutes
Remove from the form, remove the parchment paper, and let cool
Beat the heavy cream with a little sugar and add the jam
Fill and cover the sides of the cake with this mixture
Cover with whipped cream and decorate with walnuts
Serves 12 people.
