2 1/2 cups all-purpose flour
1/2 cup whole milk
1/4 cup sugar
1 tablespoon ground cinnamon
3 large eggs
1 packet active dry yeast
1 pinch of salt
For frying
4 cups vegetable oil
For dusting

1/2 teaspoon ground cinnamon

Dissolve the yeast in milk and set aside
In a large mixing bowl, combine
the flour with the remaining dry ingredients
Makes a depression in the center and add the eggs and reserved milk
Mix until you get a ball of dough

Transfer to a clean, floured surface,
and continue kneading for 5 minutes or until it becomes elastic

Divide the dough into eighteen pieces and shape each piece into a ball
Arrange them in a large baking sheet dusted with flour, cover with a clean, dry cloth, and let rest for
30 minutes or until doubled in volume

With your finger, make a hole in the center of each dough ball and spin it around your finger, forming a ring
In a pan, heat the oil over low heat (see illustration on page 55)

Fry the rings a few at a time, turning them occasionally,
until they are well browned
Scoop out onto paper towels

Mix sugar and cinnamon together and set aside
Arrange the fried rings as many as fit in a platter and dust with the reserved mixture
Serve.
