Halve the avocados lengthwise and remove the pits
Cut each half into three wedges
Trim the ends and mix with beets, macadamia nuts, and salt
Mash the egg yolks, combine with lemon juice, heavy cream, and salt to make a dressing
Let the beets and nuts soak in this dressing
Prepare individual salads on a platter, placing avocado wedges over salt
Top each wedge with mounds of the seasoned beet and nut mixture
If desired, use egg whites to garnish
Serve with mayonnaise
