2 small avocados
4 tomatoes, seeded and chopped into cubes
1 finely chopped onion
2 tablespoons of vinegar
6 tablespoons of olive oil or other neutral-tasting oil
1 tablespoon of finely chopped green coriander
1/4 cup of grated carrot
1/2 teaspoon of mustard
salt and black pepper to taste

Cut the avocados in half, lengthwise
Remove the pit and scoop out the flesh of the avocados
Reserve the skins
Chop the avocado flesh into cubes
Place it in a bowl with the tomatoes and onion
In another part, mix the remaining ingredients well with a fork until creamy
Add to the avocado with tomato and fill the reserved skins.
