Wash and dry the garlic, then arrange it on a platter
Cut 2 mangoes into sticks and reserve them
Chop the remaining mango into bite-sized pieces and blend in a blender
Add the olive oil and other ingredients to the blender
Blend until you achieve a creamy consistency
When serving, mix the garlic leaves with the mango sticks and serve with the dressing on the side
