Honey Dressing
1 cup of extra virgin olive oil
2 tablespoons of apple cider vinegar
2 tablespoons of honey
1 tablespoon of mustard
1 teaspoon of salt
Spinach
1/4 cup of crumbled gorgonzola cheese
4 spoons of freshly squeezed lime juice
3 pears with skins cut into thin slices
1 large handful of cleaned spinach

In a small bowl, whisk together the apple cider vinegar, mustard, honey, and salt
Gradually add in the olive oil, whisking continuously with a manual whisk or fork until it forms a thick and even dressing
Refrigerate for 20 minutes
Spinach Salad
In individual serving plates, arrange the spinach and top with sliced pears and crumbled gorgonzola cheese
Drizzle with lime juice and add the cheese
Whisk the dressing lightly and serve with the salad.
