Rainbow Avocado Salad

    Arrange the leaves of 1 lettuce in a salad bowl. On top of them, in a circle, place slices of 3 medium avocados, peeled, 3 hard-boiled eggs cut into wedges and 3 tomatoes without skin, cut into wedges. Sprinkle with 1/2 cup toasted cashew nuts, chopped. Mix in a small glass jar with a lid: 1/3 cup olive oil, 1 tablespoon lemon juice, 2 tablespoons vinegar, salt and black pepper to taste. Shake well and drizzle over the salad just before serving. Serves 6.
