1/2 kg of sweet potato

4 tablespoons of lemon juice
1 preserved lime rind
6 or 7 pitted green olives

Fry the onion in olive oil with salt and ginger
Add 1 cup of water
Join the cut sweet potato into 4 parts
Cover it with half the water
Let it cook
When they are almost tender, add the cinnamon stick, sweet paprika, thyme, parsley, lemon juice, pitted green olives, and preserved lime rind cut into pieces
When the sauce has reduced to half, remove from heat and let cool.
