4 large cooked sweet potatoes, cut into cubes
1 1/2 cups chopped salt
1/2 cup chopped green onion
1/4 cup chopped horseradish
2 tablespoons chopped fresh parsley
1 cup mayonnaise (can be store-bought)
1 tablespoon vinegar
2 teaspoons mustard
1/2 to 2 teaspoons salt
1 dash of cayenne pepper
lettuce leaves

Some hours before serving, mix all the ingredients except lettuce
Refrigerate until ready to serve
Serve over lettuce leaves with cooked eggs, tomatoes, or olives
