Combine the mozzarella and mango in a bowl
For the dressing: place the egg whites, lime juice, and salt in a blender
Blend well
Slowly add the olive oil until the dressing thickens and emulsifies
Add the chopped fresh mint and mix with the mozzarella and mango
Serve 8 portions.
