Slice the onions into wedges and reserve in a bowl
Mix the vinegar, olive oil, and lemon juice
Season with salt and black pepper
Drizzle the onion wedges and mix delicately
Cover with plastic wrap and refrigerate for 2 days
Mix during this period at least 6 times
Remove from refrigerator, drain the onions and reserve the dressing
Combine drained onions with ricotta cheese and parsley
Add a little reserved dressing and serve with green leaves.
