4 large tomatoes
2 tablespoons of olive oil
salt and black pepper to taste
oregano to taste
2 tablespoons of butter or margarine
100 grams of ground beef
1 finely chopped onion
2-3 tablespoons of breadcrumb
2-3 tablespoons of milk
1 egg
1-2 tablespoons of tomato extract
1 tablespoon of soy sauce
4 thick slices of mozzarella
4 large tomatoes

Remove the stem from each tomato, from the side opposite the stem
Using a spoon, scoop out the pulp from the tomatoes
Finely chop this pulp
Place the olive oil in a refrigerated form
Cover with the tomato pulp
Season with salt, black pepper, and oregano to taste
Melt a little butter or margarine in a frying pan
Add the ground beef and mix until it browns well
Taste and season with salt, black pepper, and oregano as needed
Add the onion and breadcrumb
Mix until the breadcrumb browns
Mix the egg with milk and add to the meat mixture
Add tomato extract and soy sauce
Mix for an additional minute
Stuff each tomato with this mixture
Place in a prepared baking dish
Cover each tomato with a slice of mozzarella and bake at 220°C for 20 minutes
Tomatoes can be prepared ahead of time, without the cheese.
