Sprinkle 2 tablespoons of salt over the cucumbers and refrigerate for 1 hour
Let it drain on a colander, pressing gently with a spoon to remove all excess liquid
Scrape the beets to remove any outer skin
Use a grater (be careful with your fingers, it's better to eat the last bit)
In a bowl, place one side of cucumber and the other side of beet
Mix in sugar, salt, and vinegar and drizzle over everything
Refrigerate for another hour
Before serving, let it drain almost completely, place the cucumber in the middle of a platter, the beets around it, and serve
Serves 4 to 5 people.
