2 bunches of sweet thyme (approximately 800g)

125g of cooked or raw ham
1 ripe mango

Wash the sweet thyme leaves and cut them into 2cm long strips
Mince the garlic and mix it with wine vinegar, mustard, salt, black pepper, and olive oil
Sprinkle over the sweet thyme strips and mix well
Cut the ham and mango into small cubes and mix with the sweet thyme
Serves 4.
