For the dressing
Juice and peel of 1 lime (cut the peel into very thin strips)
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon crushed sweet herb seeds
Salt and black pepper to taste
For the salad
1/2 cup chopped red lettuce with torn leaves
1 small bunch of American lettuce
3 stalks of sweet herb, cut into thin strips (900g)
For the dressing

Make the dressing: in a medium bowl, combine the lime peel with half the juice
Cover with water and ice and let it rest for 30 minutes
Drain
In another bowl, mix well olive oil, lemon juice, sweet herb seeds, and remaining lime juice
Season and reserve
To serve, distribute leaves of lettuce among eight individual plates
Place a small amount of the sweet herb strips in the center of each plate, with some peel strips on top, and sprinkle with a pinch of black pepper at serving time
Add a little of the dressing and serve
