In a pressure cooker, cook the wheat berries in water for 1 hour
or until they become soft
Drain, rinse with cold water and drain again

In a bowl, mix all the ingredients except escarola and radish
Place in the center of the salad bowl
Arrange around with escarola and radish
Garnish with olives and drizzle with olive oil and salt.
