2 bunches of spinach
1 clove of garlic, minced
1/4 cup of olive oil
1/2 cup of red wine vinegar
salt and pepper to taste
3 hard-boiled eggs, diced
4 crispy bacon pieces, crumbled

Wash the spinach, remove stems, and chop leaves into bite-sized pieces
Dry and refrigerate for 2 hours
Soak garlic in olive oil for 1 hour
Remove garlic
Just before serving, mix olive oil, red wine vinegar, salt, and pepper in a bowl
Add spinach and toss until well coated
Sprinkle with diced eggs and crumbled bacon
Gently stir
Serve 6 to 8 portions
