Dressing
1/4 cup of water
1/4 cup of vinegar
1 tablespoon of honey
1 tablespoon of soy sauce
1 tablespoon of freshly grated ginger
Salt to taste
Salad
4 small balls of yogurt sorbet
1 handful of arugula
1 handful of baby spinach leaves, chopped
1 haden mango, peeled and cut into fine slices and irregular pieces
Dressing
1/4 cup of water

Salad

Dressing
Mix all the ingredients together
Salad
Wash the arugula and spinach and arrange them in four shallow dishes
Top with mango slices
When serving, drizzle each dish with a little dressing, place one ball of sorbet on each dish, and drizzle with the remaining dressing.
