Slice the zucchini into rounds
Place it in a pot with the remaining ingredients
Cover and bring to a simmer
Reduce heat and cook slowly until the zucchini is tender but still firm: this takes about 8-10 minutes
Let it cool down
Refrigerate
Serve as a salad
