5 large sweet potatoes (1.5 kg)
1 tablespoon of salt
400g sausage, cut into 0.5cm slices
1/2 cup of finely chopped green onion (40g)
2 tablespoons of caraway seeds
1 medium-sized red bell pepper, cut into small cubes (130g)
For the dressing
2 cups of mayonnaise (400g)
2 tablespoons of lemon juice
1 tablespoon of hot sauce

In a large pot, place the sweet potatoes, cover with 2 liters of water, season with salt and boil at high heat until they're tender (about 25 minutes)
Drain, peel, and cut into 2cm cubes
Place the sweet potato in a serving dish, add the remaining ingredients, and mix gently
Set aside
Prepare the dressing: In a small bowl, combine all the ingredients and mix well
Add the dressing to the salad, mix carefully, and serve immediately
