5 bunches of Japanese spinach, chopped
3 cups cooked chicken, cold and diced
1 cup fresh Minas cheese, cubed
2 medium beets, peeled and grated
1 medium cucumber, seeded and cubed
6 green onions, chopped
1/2 cup olive oil
3 tablespoons lemon juice
1 tablespoon anchovies, finely minced
1/2 cup fresh parsley, chopped
to taste salt
1/4 cup dandelion greens, chopped
5 bunches of Japanese spinach, chopped

In a large bowl, combine the spinach, chicken, cheese, beets, cucumber, and green onions
Mix in the remaining ingredients (except for the dandelion greens) and spread over the salad
Toss carefully
Sprinkle with the dandelion greens and serve
