1 1/2 cups of cooked and diced chicken breast
'1/2 cup of chopped fresh parsley'
'1/4 cup of toasted cashews and pecans, chopped'
'1/4 cup of pitted and chopped green olives'

Soak the gelatin in cold chicken broth
Heat over low heat, stirring until dissolved
Remove from heat and add lemon juice and onion, stirring well
Add chicken, mayonnaise, parsley, cashews, and olives
Pour into a mold
Refrigerate until firm
Unmold over lettuce leaves
Serve in quarters.
