Cream Sherry
3 tablespoons cornstarch
1 cup water
3/4 cup heavy cream
1/3 cup amaretto liqueur
2 tablespoons apricot jam

2 medium mangoes
1 medium pineapple
5 oranges
3 cups shredded fresh coconut

In a saucepan, whisk together cornstarch and water over medium heat until thickened
Remove from heat, add remaining ingredients, and mix well
Let cool, cover with plastic wrap, and refrigerate for an hour
Fruit Salad
Peel the mangoes and pineapple and cut into small cubes
Tear off orange peels and remove seeds, then cut into segments
Assemble: in a large bowl, combine fruits and sprinkle with shredded coconut
Mix delicately and drizzle with Cream Sherry at serving time
Garnish with additional shredded coconut.
