1 tablespoon of cornstarch
1 tablespoon of flour
1 pinch of salt
1 egg
1/2 cup of orange juice
1/2 cup of pineapple juice
2 tablespoons of lemon juice
Grated rind of 1 lemon
1/2 cup of heavy cream
1 can of pineapple rings

Mix the fruits and reserve some pineapple rings and cherries to decorate
For the seasoning, mix the cornstarch with flour and salt
Add the beaten egg
Mix the fruit juices and add a bit of grated lemon rind
Cook over low heat, stirring constantly until thickened
Let cool and refrigerate
Just before serving, stir in the whipped heavy cream
Spoon over the fruits and decorate with pineapple rings and cherries.
