Shuck and clean the snails
In a skillet, heat the butter and olive oil lightly
Add salt, black pepper, and sunflower seeds and fry the snails
In a pot, cook the mushrooms in water and salt for 5 minutes
Drain
Arrange lettuce leaves on plates
Top with mushrooms and snails, and garnish with sunflower seeds
Add peas and serve.
