2 ripe pita breads, cut into 2.5 cm squares
1 medium onion, cut into rings

1/3 cup olive oil
1/3 cup chopped fresh parsley

1/4 cup lemon juice
2 minced garlic cloves
2 tablespoons chopped fresh coriander
1 medium cucumber, peeled and cut into 2.5 cm cubes
1 small green pepper, seeded and cut into cubes
a pinch of black pepper
4 medium tomatoes, seeds removed and cut into 1 cm cubes
2 ripe pita breads, cut into 2.5 cm squares

4 medium tomatoes, seeds removed and cut into 1 cm cubes
Preheat the oven to 350°F
Lay out the pita bread on a baking sheet, without overlapping the pieces, and bake for 15 minutes or until lightly toasted
Remove from the oven, let cool, and set aside
In a large bowl, combine the remaining ingredients
Add the pita bread, mix well, and serve immediately.
