Make a cut along the length of the sweet potatoes and poke the skin in several spots
Place them in a microwave-safe dish and cook on high for 10 minutes, or until they are tender
In another dish, heat the butter in the microwave for half a minute
Add the garlic and chicken and return to the oven for 6 minutes, stirring halfway through
Season with salt and lime zest
Mix the cheese with lime juice until it thickens
Combine with the chicken and add chopped parsley
Mix well and fill the sweet potatoes.
