For the salad
1 cup of papaya - 300g
2 ripe papayas - 500g
3 green onions, thinly sliced - 21g
For the seasoning
1 tablespoon of finely chopped onion - 15g
1 tablespoon of finely chopped mint - 7g
1 teaspoon of mustard - 5g
1 cup of low-fat plain yogurt - 200g
Salt and black pepper to taste
1/2 cup of almonds (optional)

Arrange the salad ingredients in a bowl
Mix the seasoning ingredients and add them to the salad
Toss well, cover, and refrigerate for at least 4 hours or overnight
