For the dressing
1 bell pepper, seeds removed, sliced
1/3 cup olive oil
1 tablespoon salt or to taste
1/4 cup lemon juice
250g smoked salmon, diced
For the salad
1 medium honeydew melon, seeded and thinly sliced (2 kg)
Mint leaves or parsley for garnish, as desired
For the dressing

Prepare the dressing: whisk together in a bowl the bell pepper, olive oil, salt, lemon juice, and smoked salmon
Reserve in the refrigerator
Prepare the salad: divide the melon slices among four individual plates, arranging them into flower shapes
Dress the melon with the smoked salmon dressing, cover, and refrigerate for 1 hour
Garnish with herbs and serve chilled.
